Our aim is to always make wines from organically farmed fruit, without the addition of anything, and without taking anything away.  Spontaneous fermentations, no fining, no filtration, and without the prescriptive use of winemaking sulphur dioxide. If sulphur is added, we will always disclose how much and when the additions are made in the winemaking process.
